It's over a year since I last pickled two large jars of onions... I love them and have slowly eaten them till there's none left. So nothing for it but to do some more... I much prefer pickling my own to bought supermarket ones... I know what's in them! The one and only supermarket in Takaka didn't have any bags of pickling onions... So I ordered some and they duly arrived... Like Christmas! Then I had to wait for a good outside day... We have had so much strong wind it would have blown me and the onions away... But finally the day came...
Starting the tedious job of peeling. I soak them in hot water for a few moments and the skins come of easily...
And I don't cry!
All done and soaking in salted water for 24 hours... The jars are ready... A bit of brown sugar and some pickling spices, as much or as little as you like... I prefer cider vinegar...
And 24 hours later they are all done... Lots of them! Now need to keep them for a few months to 'brew' and take up the flavour of the vinegar and spices.
They are sooooooooooooooooooooooooooooooooooooooooo yummy!
