Cockles And Fritters... Again...

When there's an easily accessible availability of cockles at the nearby beach... I can't resist them. My grandson Jordan took me along the beach on the quad and when there's two people we can gather twice as many... 150 daily limit each!   So off we went. I leave them in a cool place in sea water overnight so they spit out any sand... Absolutely nothing worse than gritty, sandy fritters.
I didn't get any helpers to open them... Funny that! So I opened a few with a knife and steamed open the rest...

After they have soaked... The bucket of empty shells...

Some in a bag for the freezer... Some in brine... And some in the pot being mixed into fritters. I briefly whizz the cockles, add them to a grated courgette, 1/2 a finely chopped red onion,
a small handful of chopped parsley, an egg or two and a couple of spoons of brown rice flour...

And they're good enough to eat...

  1. Hi Angela... Jo from Maitai Bay!! I just love your blog...it's so full of interesting "tit-bits"!!! I have never thought of grating courgette into cockle fritters. I hope my blog is as interesting as yours when I get it started!
